Meaty Marinara Fritatta

This quick and delicious fritatta will be your new favorite use for leftover meaty marinara sauce. Simply add egg whites and you have completely new and delicious dinner.

Sometimes the hardest part of eating healthy and specifically being on the HCG diet is not being able to grab fast food when you’re super hungry.  Fritattas are great for 2 reasons: One – they are super fast to throw together and require little culinary skills; Two – You can throw pretty much any in them, leftover sauces, veggies, meat, seriously whatever and it will come over fabulous.

Meaty Marinara Fritatta cu Everyday HCG

The night we made this specific fritatta for dinner, the water was shut off on our block so we had no way to cook with anything requiring water.  Tara looked in the fridge and we found leftover sauce we made from a couple days  ago and we always have egg whites and so was born one of my favorite HCG P2 egg dishes to date!

Note the calorie count is a bit high if you’re on P2, due to the tomato sauce and meat so I would either eat a smaller lunch or use a marinara sauce without the meat as an alternative

The is my new favorite use for leftover meaty marinara sauce. Simply add egg whites and you have completely new and delicious dinner.
Ingredients
  • 2 cups homemade meaty marinara
  • 1/2 small carton of egg whites (about a cup or the egg whites of 8 large eggs)
Instructions
  1. Turn oven to 400 degrees F
  2. Warm up the sauce in an 8 inch nonstick pan over medium heat. It’s REALLY important that you use a good nonstick pan here or you’ll end up with a mess.
  3. Once sauce is hot, pour in the eggs and mix up sauce and eggs until well incorporated (about 20 seconds).
  4. Let eggs cook over medium heat for 3-5 minutes
  5. Once the eggs start to set and the sides start to pull in move the pan into the oven and let it finish cooking for 8-10 mins
