When we’re running late and are super hungry, rotisserie chicken is one of our go-to’s while on the HCG diet. Since the protein portions are so small on the HCG diet, there are always leftovers. We came up with this recipe to use up the left over chicken.
Leftover Chicken Broccoli Spinach Soup

Ingredients
- 4 cups broccoli florets
- 2 cups spinach
- 1 large yellow onion, diced
- 1/8 tsp red chili flakes (a couple shakes)
- 4 cups beef broth (no sugar added)
- 2 cups water
- 3 oz cooked shredded chicken breast
Instructions
- In a large pot simmer beef and onion over high heat. Cook until reduced by half
- Add in broccoli, spinach, chili flakes and the rest of the water. Bring soup back back up to a boil and simmer veggies until cooked to you liking (2-5 minutes).
- Add already cooked chicken in and taste for seasoning. Depending on the broth you use, the soup will likely be salty enough without adding any extra.
