Tara and I have been really into green veggie smoothies this round of HCG. I personally have a hard time eating so many plain greens so blending them up, adding natural flavors and turning them in a jelly/gummies/jello jiggerlers is simply AWESOME!

These deliciously green jellies are a fun and playful way to get your daily serving of veggies. It’s the perfect way to make your veggies smoothie into something new (Low Carb, Low Cal, P2)!
Ingredients
- 2 cups spinach
- 1/2 apple
- 2 cups water
- 1/2 tsp stevia glyserite
- 3/4 tsp natural flavoring (I used pineapple)
- 2 1/2 tbsp grass-fed gelatin
- 1/4 cup cold water
- 1/2 cup boiling water
Instructions
- Bloom gelatin by sprinkling it over 1/4 cup cold water. Set aside.
- Boil water enough to produce 1/2 – 1 cup
- In a blender combine spinach, apple, stevia and 2 cups water. Pulse then blend until smooth. If desired strain pulp with a wire sieve.
- Slowly pour in about a half cup of boiling water into bloomed gelatin while mixing vigorously with a whisk. Once fully mixed, slowly add in green juice and additional flavoring. Taste and adjust flavoring and sweetness as desired.
- Line a 8×8 dish with parchment paper and carefully pour mixture into dish. Let set at least 2 house in fridge or kickstart the process by sticking it in the freezer for 20 mins.
- Once solid, slice and enjoy!
Notes
If you want it really solid (less jello jigglers, more gummies) add an extra 1-1.5 tbsp gelatin.
