2-minute eggs – my go-to recipe when there’s no time to think or cook. This is the the fastest and easiest way to make egg, simply pour, season, microwave fluff and your done!
I don’t know about you, but for me it’s always way more challenging to stick with a diet when I’m busy. The last two weeks have been filled with spectacularly busy days and unusual schedules. All of that resulted in starting a round of the HCG diet being totally unprepared with an empty fridge and pantry.
My 2-minute eggs not only are quick and easy, but have saved me numerous times from cheating on the diet.
- 1 egg + 2 egg whites
- 1 tsp chives (fresh or freeze dried)
- Salt
- Pepper
- Garlic Powder
- In a microwave safe bowl, add all ingredient.
- Microwave on high for 45 seconds. Remove from microwave and stir.
- Microwave on high for another 45 seconds. The egg mixture will puff up into a giant ball while cooking (like a souffle).
- Remove from microwave. The egg ball will start to deflate. Let cool for a bit and mash up eggs with folk. Once mixed, you can eat right out of the bowl (just make sure it’s not too hot so you don’t burn your tongue).
The ideas with this recipe are really endless… Have veggies or meat left over from yesterday? Awesome – just chop them up small and add!
