Quick, easy and delicious Tomato Basil Soup. This rich and creamy recipe is low carb and approved for P2 on the HCG diet.
This soup is great so for so many reason: It takes less than 10 minutes to throw together, I already had all the ingredients on hand (and likely you do too) and it freezes and reheats really well!
If you don’t have basic on hand you could easily swap another herb, but we had basil which made for this classically delectable pairing.
Tomato Basil Soup with Greek Yogurt

Quick, easy and delicious Tomato Basil Soup. This rich and creamy recipe is low carb and approved for P2 on the HCG diet.
Ingredients
- 1 15oz Can Tomato Sauce
- 1 15oz can Tomato Puree
- 1 yellow onion Fine Diced
- 1.5 cups Low Sodium Chicken Broth
- 4 Cloves of Garlic Minced
- 1 cup of Basil Rough Chopped
- Salt/Pepper
- 1 Bay Leaf
Instructions
- In a soup pot add in chicken broth, onions, garlic , and bayleaf and bring to a boil
- then add in the tomatoes , season and boil for 5 minutes.
- off the heat in a blender or hand blender add in basil and puree.
- portion in a bowl and dallop with ¼ cup of greek yogurt in the center and 1 basil leaf chopped.
Notes
When the soup is hot, the greek yogurt will start to melt naturally. Stir to incorporate for a super creamy finish! If you are only going to eat a part of the soup, hold off adding the yogurt until after the soup is reheated for best results.

Hello, I just started Hcg this week. Found your website today and made the beef & broccoli tonight. It was sooooo good!!! I want to make the tomato soup but have a couple of questions. Is the soup considered a meal? Greek yogurt wasn’t on my meal plan….are you sure it’s ok? I guess you didn’t have any trouble losing weight while eating it, right? Also my plan says to have Melba toast or a breadstick 2 x a day and I saw no mention of that in your info. Just wondering about that. Thank you so much for any help or words of wisdom and keep those recipes coming! They are amazing
