I don’t know about you – but I’m a dessert girl. If I have to choose between salty and sweet I pretty much always choose sweet. One of the hardest parts of P2 for me is going for an extended period of time with no dessert.
I created this recipe so I would have a no-fuss, super-easy-make cookie recipe on hand that I could throw together whenever I had a sweet tooth attack without trowing away all the hard work I had just put into getting healthy.
The other great thing about this recipe is it’s versatility – in addition to being a cookie recipe it can be used as a pie or tart crust, or crumbled up and sprinkled on top of your favorite healthy dessert.
