Comforting Ginger Chicken Soup, A homey dish that warms you up on those cold days.
I put together this recipe because it reminds me of certain flavors in a classic filipino dish “Tinola” which is a basic chicken soup flavored with ginger and garlic and light vegetables. I often crave those flavors as they remind me of cold days enjoying a big pot of soup made by my dad. This soup will warm you inside and out.

Ingredients
- 3oz boneless skinless chicken tenders diced
- 4 thin slices of ginger
- 3 stalks of celery sliced thin
- 4 cups low sodium, sugar free chicken broth
- 2 cloves minced garlic
- salt
- pepper
Instructions
- In a sauce pot bring broth to a boil.
- Add in ginger, garlic, and celery and simmer for 5 minutes.
- Put in chicken and boil for another 10 minutes.
- Season with salt and pepper to taste.
